The Origins of Sweet Baby Ray’s BBQ Sauce

What transforms a local barbecue sauce into a national sensation? For Sweet Baby Ray’s, the journey began in the vibrant atmosphere of one of Chicago’s notable culinary competitions: the Mike Royko Rib-Off. This event, often referred to as “Ribfest,” was conceived in the early 1980s after columnist Mike Royko jokingly claimed that his family’s rib sauce was unparalleled. When challenged, he launched the first Ribfest in 1982, and what followed was a gathering of numerous competitors and a celebration of culinary community spirit.

Entrepreneurs Larry and Dave Raymond, who affectionately referred to each other as Sweet Baby Ray during their childhood basketball games, participated in the competition twice. Their inaugural attempt in 1982 ended in mishaps, resulting in charred ribs due to late judges. However, a strong showing in 1985 culminated in a second-place finish that inspired the brothers to take on the barbecue sauce industry. Today, Sweet Baby Ray’s reigns as the best-selling barbecue sauce in the United States, according to recent consumer data.

    The Rise to BBQ Dominance

The mantra for Sweet Baby Ray’s, as stated on their official website, is “The sauce is the boss.” This philosophy has remained steadfast as the brand has expanded from a single sauce offering to a diverse lineup of over 30 flavors—each crafted to cater to different taste preferences. A defining ingredient in their original recipe is Tabasco sauce, which infuses the sauce with a distinctive blend of sweetness and heat.

As Larry Raymond once explained, this concoction is designed to enhance food flavors rather than overpower them. It offers a spicier profile when cold, while heating it tempers the heat. The original recipe has evolved, now including various options like no-added-sugar, Hawaiian, buffalo-style, mustard, and garlic flavors, showcasing the brand’s adaptability in a competitive market.

Looking back to the 1985 Ribfest, Mike Royko published a candid article about the event’s outcomes, capturing the drama of the competition. Although he did not mention the Raymonds’ impressive second-place finish, Sweet Baby Ray’s has transcended its early setbacks, becoming a household name in barbecue sauces across the nation.
